If a dutch national has a baby, is that baby a Dutch or a Uk national? I've just advised a new claim for an imminent mother but we couldn't confirm whether baby would be British or not.

Since 1.1.1983, a child born in the UK is only a British citizen if the father (if the parents are married) or the mother is either a British Citizen or has indefinite leave to remian in the United Kingdom - I'm not sure if the permanent right of residence of EU nationals after 5 years' residence also gives this right.
Before that anyone born in the UK was a Citizen of the United Kingdom and Colonies, irrespective of the nationality or immigration status of the parents.
